Spicy Thai Garlic Bundles

  1 lb lean ground beef, chicken or turkey
  2 cloves garlic, minced
  2 green onions, chopped
  1 med. bell pepper  -OR- 1 lb green beans, steamed
  1 8 oz can water chestnuts, drained and chopped into thick slivers
  1/3 to 2/3 cups peanut satay sauce
  1 tbsp fresh cilantro or parsley, minced
  1/4 tsp salt, optional

Heat large frying pan over high heat.  Add meat and garlic.  Stir-fry until meat is lightly browned.  Drain fat if necessary.  Add green onions and bell pepper/green beans and stir-fry about 1 minute.  Mix in water chestnuts, satay peanut sauce, cilantro and salt.  Cook and stir 1 minute, or until fully heated through.  Serve!

Serving suggestions:
    Serve with lettuce leaves or on rice.
    Serve with peanuts, soy sauce and hot garlic pepper sauce on the side.

Personal notes: The original recipe did not include the “or green beans.”  That was a change we made.  We have never made it with bell pepper and really like it with green beans.  We also often add more garlic than is called for… =)

Satay sauce can be bought at the store, but recipes can also be found online.  It is an easy blend of peanut butter, coconut milk, soy sauce and various spices.

Johnna and I tried this one. It was GREAT!  We used bell peppers and served it as a lettuce wrap.  Good Suggestion!
